
This Santoku knife from the Thomas Keller Signature Collection by Cangshan performs the three essential cutting tasks a Santoku is named for: slicing, dicing, and mincing. A Santoku knife handles the same work as a chef's knife, but it features a thinner spine and blade, as well as a blunt tip and straight edge.
The Cangshan Thomas Keller Signature Collection was created in partnership with Michelin-Starred chef Thomas Keller and award-winning cutlery maker Cangshan. The blades are forged from Swedish Damasteel RWL34 powdered steel. This fine-grained, high-alloy steel offers excellent edge strength, hardness and corrosion-resistance. Each blade undergoes a six-stage heat treatment, resulting in 61 Rockwell hardness for exceptional edge retention. Hand sharpened to a 16-degree edge and hand polished by expert bladesmiths, each knife is packaged in a walnut box featuring Thomas Keller's signature. Handles are made from a food-safe polymer, with a single rivet bearing Thomas Keller's initials. Winner of a 2019 Red Dot Design Award.
