Posted by Julie on Jul 1st 2016

It's difficult to pick a seasonal ingredient for July because it seems like everything is in season now. But one of our favorites is zucchini, thanks to its versatility and how well it can grow in home gardens. Whether you harvest it at home or grab it at the grocery store, check out all the best zucchini recipes we could find

Grilled Zucchini With Herb Salt and Feta

It wouldn't be summer without a recipe for grilled zucchini. We've already raved about how delicious grilled vegetables are, and zucchini is one of the stars. We love this recipe from Food Network that's so easy and tasty too. Try changing up the herbs to add some variety to this staple. Don't forget the feta to give this side even more flavor dimension.

Zucchini Chips

You can buy veggie chips at the supermarket, of course. But you can also make them yourself at home for a fraction of the price. Check out Julie's super simple recipe for zucchini chips on Table for Two. Slice them thinly so they cook up crispy. You can use a mandoline or v-slicer to ensure all the chips are similarly sized, which helps them cook evenly. Or if you've got excellent knife skills, do the same with a sharp chef's knife. Be sure to heed her caution regarding salt or whatever seasoning you use; less is more.

Zoodles

Zucchini noodles -- zoodles -- are all the rage, which means we couldn't settle on a single recipe featuring zoodles. Instead, we found this compilation of 28 zoodle recipes courtesy of Hurry the Food Up. If you don't already have a spiralizer, grab one and start having fun. Chicken Zucchini Bites With Pistachio

This zucchini recipe from Barbara at Buona Pappa surprised us, in a good way. We love how she combines thinly sliced chicken breast with zucchini, and the pistachio filling adds a fantastic touch. They're a bit labor intensive, but these rollups could make a great appetizer, or even a main dish. The best zucchini recipes are the ones that are both delicious and unusual.

Zucchini Green Chile Quiche

We're all for turning on the oven long enough to bake up this quiche recipe we found on Mom on Timeout featuring zucchini and green chiles. Make quick work of grating the zucchini with one of our Microplane graters. Canned green chiles will work for now, but be sure to make this dish again when Hatch green chiles are in season.

Snickerdoodle Zucchini Bread

Who knew snickerdoodles could include vegetables? The chef couple behind Oh, Sweet Basil incorporates the taste of this classic cookie into their delicious zucchini bread recipe. We probably shouldn't have dessert first, but this has to be one of the best zucchini recipes we've found. Therefore, it's at the top of our must-try list.
