There's something comforting about tried-and-true cookie recipes. You know they'll turn out well, and you enjoy making them -- and eating them too, of course.

But sometimes you want to bake something new and different, like during National Cookie Month. That's where unique cookie recipes like these come in. We gathered five deliciously different cookie recipes for the next time you feel like changing up your cookie-baking routine.

Unique Cookie Recipes: Maple-Glazed Apple Crisp Cookies

These cookies are just perfect for fall. Created by Ashley of The Recipe Rebel, you can either use yellow cake mix in these cookies, or follow the recipe she developed from scratch. Be sure to bring your ingredients to room temperature before mixing, and then chill the dough before baking.

Keep in mind the ingredient quantities for the maple glaze only make enough for three or four cookies; you'll want to make more than that!

Unique Cookie Recipes: Pumpkin Sugar Cookies With Cinnamon Cream Cheese Frosting

Another cookie recipe that's all about fall are these pumpkin cookies by Jaclyn from Cooking Classy. Using both butter and vegetable shortening should help keep these cookies from spreading, but you may want to pop the dough into the refrigerator before baking.

Jaclyn recommends letting these cookies cool on the baking sheet before transferring to a cooling rack. We'll defer to her, but it wouldn't hurt to keep an eye on the first batch or two. In the comments, she also advises storing any leftover cookies in the fridge. (Leftover cookies? What are those?)

Unique Cookie Recipes: Green Tea Matcha Cookies

We love this cookie recipe from Ahu Eats for its simplicity. Matcha has a delicate flavor that can be easily overpowered by other ingredients. This recipe allows green tea to be the star without competing with other tastes. Kids might not fully appreciate these cookies, but we're confident adults will.

Ahu does emphasize using culinary grade matcha powder, found either at an Asian grocery or a natural foods store. Once again, refrigerate the dough before baking for best results.

On the other hand, we bet kids will love these cookies created by Paula of Call Me PMC. Between the potato chips and the chocolate chips, what's not to love?

Paula makes several recommendations in her recipe that we wholeheartedly endorse. First, use a silicone baking mat. Second, use a scoop to get all of your cookies the same size. We like the scoops from RSVP that come in sizes from 1.25 to 2-inch diameter. Finally, Paula advises scooping balls of cookie dough before refrigerating them.

Unique Cookie Recipes: Salted Caramel Sugar Cookies

These beautiful cookies by Julie Blanner are deceptively simple. They look almost like the classic Peanut Butter Blossoms, but instead of a chocolate kiss in the middle, there's caramel frosting. Be sure to bring all ingredients to room temperature as Julie directs, so they will mix properly. Make a small impression in each ball of dough before baking, and then spoon frosting into that space after baking.
