The Kikuichi Nickel Warikomi Damascus Sujihiki Knife is a Japanese slicing knife used mostly for preparing cooked and raw meats. The long, narrow blade has a double-bevel.
Kikuichi bladesmithing began in the 13th century, creating Samurai swords for the Japanese emperor. Kikuichi has been making kitchen cutlery for 150 years, with the royal symbol of the chrysanthemum on all blades. This high performance Damascus-clad blade is made from a Aichi AUS10 nickel stainless steel core. Each side of the blade is composed of 11 layers of nickel, 6 layers of SUS410 stainless steel, and 5 layers of J1 stainless steel. The blade is sharpened to 60 Rockwell hardness for exceptional edge retention, and hand engraved with the Kikuichi chrysanthemum logo. The octagonal rosewood handle is finished with an ebony end cap.
