This slicing knife from the STEELPORT Knife Co. combines features of a carving knife and a cimeter to slice easily with a single stroke. The curved blade keeps your knuckles out of contact with the cutting board. Use it for slicing large cuts of meat, carving poultry, portioning fish, and even making sushi and sashimi.
The blade is drop forged from American 52100 carbon steel, heat treated to achieve 65 Rockwell hardness for unparalleled edge retention. The finished blade is hand-smoothed on all surfaces, including the bolster and spine, and the edge is hand-sharpened. Full tang construction offers balance and strength while cutting. The handle is made from locally sourced Oregon Big Leaf Maple Burl stabilized with resin to prevent swelling or shrinking. Each handle is precision machined to achieve feel and contour for excellent control without fatigue. The steel end cap features an engraved STEELPORT logo.
